Mussels with Garlic, Thyme and Pepper
serves 4

Instructions

  1. Heat the butter and oil in a large pot. Cook the shallots until translucent, then add the garlic and cook until fragrant.
  2. Add the tomatoes, thyme, wine, broth, lemon juice, and red pepper. Season to taste. Bring to a boil.
  3. Add the mussels and cover. Cook until the mussels open, moving the mussels around occasionally.
  4. Plate, garnish with parsley and lemon zest, and serve with bread.
