Mussels with Garlic, Thyme and Pepper
serves 4
Ingredients
- 4 lb mussels
- 3 T butter
- 3 T olive oil
- 1/2 C shallots, chopped
- 6 cl garlic, minced
- 2 ea tomatoes, seeded and diced
- 1/2 T dried thyme
- 1 1/4 C dry white wine
- 3/4 C chicken broth
- 2 T lemon juice
- 2 t kosher salt
- 1/2 t red pepper flakes
- 1/4 C flat leaf parsley, chopped
- 1 T lemon zest
- garlic toast or crusty bread
Instructions
- Heat the butter and oil in a large pot. Cook the shallots until translucent, then add the garlic and cook until fragrant.
- Add the tomatoes, thyme, wine, broth, lemon juice, and red pepper. Season to taste. Bring to a boil.
- Add the mussels and cover. Cook until the mussels open, moving the mussels around occasionally.
- Plate, garnish with parsley and lemon zest, and serve with bread.
